Using Christmas/ Roast Dinner Leftovers!Preparation and Ideas!!

I've always wanted to know what the best way is to use the leftovers from Christmas dinner because year after year I find myself throwing away delicious food solely because I can not be bothered to cook again after cooking for soooo long! This could also be because of my bad habits as a student clinging on to me! But after asking my friends and very wise mother, I have decided times will change this year and I plan to use as much leftovers as possible to feed my friends for days to come. Preparation is key!
So firstly to minimise any unnecessary stress I am going to clean out my fridge making space for the many tin foiled dishes I will need to put in there. I wouldn't use any of the dishes the food was made in because hopefully most of it would have been eaten thus there would be dead space in the cooking dishes! So to rectify this when the food has nicely cooled down, I am going to scoop all of the tasty food into water tight containers which would keep the food fresh and not take up too much room in the fridge.
So now time for the food! I plan to strip all the meat off the turkey thus saving space and its then easier to manage. The carcass can be frozen to be used for soups at a later date. I love the turkey soup my mum used to make!
By adding a little chopped celery, and mayo to the seasoned sliced and diced meat. You can create a tasty salad, or use it on top of toasted bread.
You can create a casserole dish with leftover Xmas dinner rice or macaroni and cheese. Whether the rice is, simply add some chopped meat, be it turkey or chicken, a can of cream of mushroom soup, and some shredded cheese. Bake at 320 degrees for twenty minutes-ish or until soup is bubbly and you have dinner for the next night to feed those hungry tums!!
Another tip would be to label the containers in the fridge to stop wondering hands! We don't want your leftovers specials being eaten before they're made!!
