Kobe Beef....anyone tried it................?!

Well.......

Kobe Beef is a legendary delicacy of Japan, a type of beef that is so well marbled that it goes right off the charts for Prime grading in any other country. The meat ends up looking like it has been left out in the snow because of the intensiveness of the white fat marbling, rivals foie gras for richness and caloric content, and costs an obscene amount, often £100 a Kg or more for the real thing from Japan.

I have been exhaustively researching the topic of Kobe Beef, since I had heard that they were ranched successfully in the Uk for sale to a hungry market.

Let's start with the basics—Kobe beef comes from a breed of cattle called Wagyu. In order to earn the designation/appellation of "Kobe Beef", the Wagyu beef must come from Kobe, Japan, and meet rigid production standards imposed in that prefecture.

The Wagyu cattle that produce the highly prized meat were introduced into Japan in the second century as work animals, used in rice cultivation. The mountainous topography of the islands of Japan resulted in small regions of isolated breeding, yielding herds that developed and maintained qualities in their meat that differ significantly from all other breeds of cattle. Resulting herd isolation and the distinctive feeding techniques put in place because of the limited land availability have lead to distinguishing features that make the meat both superior in marbling and in the ratios of unsaturated versus saturated fats.

In Japan, the creatures are fed on rice beer AND massaged daily, which sounds like a pretty idyllic life style to most! The resulting meat is an incredible tender, melt in the mouth, buttery flavour and is heavily marbled throughout. There is no doubt that this is a very special meat, which will enhance menus across the country. Hi there, ive been looking for kobe steak everywhere!!! But i can only find it in really exclusive resturants in london. Nice to see that you stock such a range of rare products.......keep up the good work
