Homemade Chocolate Cheesecake Chocolate Brownies! AMAZING

These brownies are amazing!! I baked them the other day on a snow day....definately kept a smile on my face and on my belly! So I thought I should share this recipe because everyone should try this taste oh heaven!!
This recipe makes 16 delicious brownies!
Ingredients
200g/ 7oz of low fat-soft cheese
1/2 tsp vanilla extract
225g/ 8 oz caster sugar
2 eggs
85g/ 3 oz butter plus extra for greasing
3 tbsp cocoa powder
100g/ 3 1/2 oz self-raising flour, sifted
50g pecan nuts, chopped, extra to decorate.
For the Frosting:
55g/ 2 oz butter
1 tbsp milk
75g/ 2 3/4 oz icing sugar
2 tbsp cocoa powder
Method
- Preheat the oven to 180 C/250 F/ Gas mark 4. Lightly grease a 20-cm/8-inch square cake tin and line the base with baking paper.
- Beat together the soft cheese, vanilla extract and 5 teaspoons of the caster sugar until smooth, then set aside.
- Beat together the eggs and remaining caster sugar until light and fluffy. Place the butter and cocoa powder in a small saucepan and heat gently, stirring until the butter melts and the mixture combines, then stir it into the egg mixture. Fold in the flour and pecan nuts.
- Pour half of the mixture into the prepared tin and smooth the top. Carefully spread the cheese mixture over it, then cover it with the remaining cake mixture. Bake in the preheated oven for 40-45 mintues. Let cool in the tin.
For frosting
To make the frosting, melt the butter in a small saucepan with the milk. Stir in the icing sugar and cocoa power. Spread the frosting over the brownies and decorate with pecan nuts. Let the frosting set, then cut into squares to serve.
